I love myself a good quick and easy salad. I am all about fast and delicious! But if its healthy, I'm even MORE about it. It's so crazy to me, how when I make random things in my kitchen, they turn out the absolute best! Here is one of my favorite go-to's lately. I hope you try it out! Cucumber Chickpea Salad Ingredients: ~1/2 English Cucumber ~1 cup Cherry Tomatoes ~1/2 Red Onion ~1 can Chickpea ~1 bunch Cilantro ~1/2 cup Feta Cheese ~1 lime (juiced) ~1/4 cup Olive Oil ~Salt/Pepper to taste Directions: 1. Chop cucumber, tomatoes, red onion and cilantro and add to a bowl. 2. Drain can of chickpea and add to the bowl. 3. Juice lime and add olive oil, salt and pepper. MIX. 4. Toss the salad and sprinkle with feta cheese.Enjoy!
