I can't be the only one who loves funnel cakes right? One day I was just in the mood and had to make myself some since the fair wasn't happening till 4 months later.
Got onto Pinterest and found myself a few difficult recipes, so I whipped up my own and it came out tasting identical to an actual funnel cake.
Makes 3 good sized pancakes
Ingredients:
-1cup Pancake Mix Complete (the just add water kind)
-1/2cup Milk
-1 Egg
-1inch Vegetable Oil
Directions:
Add an inch of thickness of vegetable oil to a sauce pan.
Get the oil to reach 350-360 degrees.
Mix the rest of the ingredients into a bowl and pour into a squirt bottle.

If you don't have a squirt bottle, you can use a zip lock bag and cut the edge
so that you can squeeze the batter into the oil.
You want squeeze batter in a circular motion close to the oil.
Fry for 20-30 seconds on each side until golden brown.

Transfer onto a paper towel with a slotted spoon to drain the excessive oil.
And thats it! Add whatever toppings you may like. I added powdered sugar, chopped up strawberries, and strawberry cheesecake flavored ice cream-yum!
