Bianca Lively: Healthy Glazed Donuts

Healthy Glazed Donuts

Okay so you are probably wondering how the heck these donuts are healthy right? When looking for a donut recipe I couldn't fathom the thought of frying and having grease all over my kitchen.

One, I hardly ever eat anything fried because it hurts my stomach extremely and two, the calories and fat that come with them being fried... holy cow!
I'd choose baked donuts any day if I had the patients to make them every day.. So, good'ol Pinterest did it to me again! Or should I say Pinterest did it to my husband again since he loves his sweets and eats everything that I bake.

(at least some things are healthy hehe)

For the donuts: Makes 8.
  • 1 C. Whole Wheat White Flour
  • 1/4 C. Sugar/Sweetener/Honey (I used sugar)
  • 1 Tsp. Baking Powder
  • 1/4 Tsp Ground Cinnamon
  • 1 Large Egg
  • 1/4 C. Plain Fat Free Greek Yogurt
  • 2 Tbsp. Fat Free Milk
  • 1 1/2 Tbsp. Light Butter, Softened
  • 1 Tsp. Vanilla Bean Paste or Vanilla Extract if you don't have Vanilla Bean Paste

For the glaze:
  • 1/2 C. Powdered Sugar
  • 1 Tbsp. Fat Free Milk
  • 1/2 Tsp. Vanilla Bean Paste or Vanilla Extract if you don't have Vanilla Bean Paste.

Side note:
The Vanilla Bean Paste is honestly what makes this glaze and donut. So i'd recommend getting it at your local grocery store. But if you absolutely don't want to, you can use Vanilla Extract as a substitute.

For the donuts:
1. Preheat oven to 325 degrees F. and lightly spray your donut pan with non-stick cooking spray. (I don't have a donut pan. So I used a normal baking sheet and formed my donuts into circles.)

2. Combine the first four dry ingredients together in a mixing bowl until well blended from the donut section (Flour, Sweetener/Sugar/Honey, Baking Powder, and Ground Cinnamon). Then set aside.

3. In a separate bowl, whisk together the remaining wet ingredients until smooth and creamy. May have a little bit of chunks in it from the greek yogurt.

4. Next add the wet ingredients in with the dry ingredients and combine just until everything is fully incorporated like pictured below..

5. Spoon the dough into the prepared donut pan/baking sheet, dividing evenly among the sections. I was able to make about 8 donuts. **you can put the dough into a gallon ziplock, seal it, cut the end off and use that to pipe into your pan or onto your baking sheet.

6. Place the pan in the oven to bake for about 10-15 minutes until donuts are cooked through.
**The donuts will not turn golden brown, but should 'spring back' to the touch when done.
Once done, remove the donuts from the oven and allow to cool.

7. Now to make the glaze: Whisk together all the glaze ingredients and set aside till the donuts are cool.

8. Lastly, dip the donuts face down into the glaze and place on a drying rack for about 5-7 minutes.
