Southern Dinner

Being the pregnant lady that I am. I have been strangely loving my spinach salads
with grilled chicken, so I decided to give my husband a break
and actually make dinner! 

A Southern Dinner 

And it came out amazingly delicious! I was searching and searching online for
some great recipes and found some great semi easy recipes. 
We have had catfish sitting in our freezer for some time now. And decided to finally use it!

Our night called for Blackened Catfish with Baked Jalapeño Cheese Grits, and Green Beans on the side.

Here is the recipe! First up, Blackened Catfish!

Blackened Catfish:
  • 4 (4oz) catfish fillets, skinned
  • 3/4 cup unsalted butter (melted)
  • 1tsp ground black pepper
  • 1tsp garlic powder
  • 1tsp onion powder
  • 1tsp paprika
  • 1tsp dried parsley
  • 1tsp ground cayenne pepper
  • 1tsp salt
  • 1/2tsp dried oregano
  • 1/2tsp dried thyme
Directions:
1. In a mixing bowl, mix together all the ingredients EXCEPT for the butter and fish.
2. Lay the catfish flat and thoroughly coat the catfish with the spice mixture (front & back).
3. Heat a skillet on high and pour about 1/4 cup of the melted butter into the skillet; set the remaining aside.
4. When the butter in the skillet is smoking hot, lay as many catfish as you can fit into the skillet. (I only fit 2 flat). Cook until the spices are burned onto the fillets and the catfish is flakey inside, about 3 minutes per side. 
5. When the catfish is done and you are ready to serve pour the remaining butter onto each fish. (ya, not the healthiest meal I've made).


For the next recipe, Baked Jalapeño Cheese Grits!

Jalapeño Cheese Grits:
  • 2 cups quick cooked grits
  • 2 1/2 cups grated sharp cheddar 
  • 1 stick unsalted butter
  • 1tablespoon hot sauce (I used tapatio)
  • 3 large eggs well beaten
  • 2 whole jalapeños finely diced
  • 1/4 cup canned chopped green chiles
  • garlic salt for taste
Directions:
1. Preheat oven to 350 degrees F.
2. Cook the grits according to the directions on the package. When finished, remove from heat and add the next 6 ingredients (cheddar through chillies).
3. Stip well and season with garlic salt.
4. Pour into a buttered 9x13-inch baking dish and bake for 45minutes to an hour. Let cool slightly before slicing and serving. Yummm. 

And last but not least! The Green Beans!

Green Beans:
  • l lb green beans trimmed
  • Salt
  • 6 strips of bacon chopped
  • 1 small yellow onion chopped
  • 1 clove of garlic minced
  • 1tsp red pepper flakes
  • 1/2 lemon juice 
  • fresh ground pepper
Directions:
1. Boil water and some salt. Toss in the green beans and cook until the green beans are bright green in color and crisp, about 5 minutes. 
2. Drain the green beans and shock them in a large bowl of ice water to stop the cooking. Then pat dry.
3. Cook the bacon in a large skillet until crispy. Remove the bacon and only leave about 2 tablespoons of bacon grease in the pan.
4. Add chopped onion and sauté until soft and tender, 4 to 5 minutes. Next add garlic and red pepper flakes.
5 Finally add the green beans to the onion, garlic mixture and cook again for 5 minutes more. Return the bacon to the skillet and pour the lemon juice in and toss it together. Season with salt and pepper if you wish. 

And the final result was phenomenal! A little southern dish for my husband!
