26 weeks

26 weeks today!
I just can not believe how fast time if flying by. 
To think that we may only have between 11-14 weeks left to go
just makes me so anxious and excited!!!

I was talking to a friend the other day about child birth. And my thoughts about it all.
And truthfully, I am so excited to experience something like this.
I've always been well at tolerating pain,
and I realize child birth is a completely different level of pain. But the thought 
of being able to hold my precious baby at the end of it all, just gets me so happy!

I cant not wait.

Pregnancy Update:
How far along are you? 26 weeks
Total weight gain/loss? 13 solids baby
Maternity clothes? nope! still enjoying my yoga pants, and workout clothes.
Stretch marks? no, thankfully!
Sleep? ehh, a little on the tough side considering my back has been a little off these past few days.
Best moment this week? having something from our baby registry show up at our door step. its almost time!!!
Miss anything? being able to take classes this coming semester.. sophia coming this november and finals falling in december is not a good idea. 
Movement? yes, tons! she is starting to hurt me sometimes..
Food cravings? nope. just my normal eating habits. :)
Anything making you queasy or sick? nothing really
Have you started to show yet? yes, for a few months now it seems
Gender? little mamasitaaaaaa princess
Labor signs? no, just the typical braxton hicks here and there, nothing too serious.
Belly button in or out? its sort of flat.... if that makes sense? hahaha
Wedding rings on or off? on. i love my rings
Happy or moody? very happy with the way our lives have turned out. smiley faces everyday!
Looking forward to? my baby shower! yes! only 3 weeks and 5 days to go till I can see all my friends and family.

I am really enjoying this pregnancy... I always dreamt about being pregnant and starting a family with my husband. And its finally here. So extremely blessed and thankful .

Southern Dinner

Being the pregnant lady that I am. I have been strangely loving my spinach salads
with grilled chicken, so I decided to give my husband a break
and actually make dinner! 

A Southern Dinner 

And it came out amazingly delicious! I was searching and searching online for
some great recipes and found some great semi easy recipes. 
We have had catfish sitting in our freezer for some time now. And decided to finally use it!

Our night called for Blackened Catfish with Baked Jalapeño Cheese Grits, and Green Beans on the side.

Here is the recipe! First up, Blackened Catfish!

Blackened Catfish:
  • 4 (4oz) catfish fillets, skinned
  • 3/4 cup unsalted butter (melted)
  • 1tsp ground black pepper
  • 1tsp garlic powder
  • 1tsp onion powder
  • 1tsp paprika
  • 1tsp dried parsley
  • 1tsp ground cayenne pepper
  • 1tsp salt
  • 1/2tsp dried oregano
  • 1/2tsp dried thyme
Directions:
1. In a mixing bowl, mix together all the ingredients EXCEPT for the butter and fish.
2. Lay the catfish flat and thoroughly coat the catfish with the spice mixture (front & back).
3. Heat a skillet on high and pour about 1/4 cup of the melted butter into the skillet; set the remaining aside.
4. When the butter in the skillet is smoking hot, lay as many catfish as you can fit into the skillet. (I only fit 2 flat). Cook until the spices are burned onto the fillets and the catfish is flakey inside, about 3 minutes per side. 
5. When the catfish is done and you are ready to serve pour the remaining butter onto each fish. (ya, not the healthiest meal I've made).


For the next recipe, Baked Jalapeño Cheese Grits!

Jalapeño Cheese Grits:
  • 2 cups quick cooked grits
  • 2 1/2 cups grated sharp cheddar 
  • 1 stick unsalted butter
  • 1tablespoon hot sauce (I used tapatio)
  • 3 large eggs well beaten
  • 2 whole jalapeños finely diced
  • 1/4 cup canned chopped green chiles
  • garlic salt for taste
Directions:
1. Preheat oven to 350 degrees F.
2. Cook the grits according to the directions on the package. When finished, remove from heat and add the next 6 ingredients (cheddar through chillies).
3. Stip well and season with garlic salt.
4. Pour into a buttered 9x13-inch baking dish and bake for 45minutes to an hour. Let cool slightly before slicing and serving. Yummm. 

And last but not least! The Green Beans!

Green Beans:
  • l lb green beans trimmed
  • Salt
  • 6 strips of bacon chopped
  • 1 small yellow onion chopped
  • 1 clove of garlic minced
  • 1tsp red pepper flakes
  • 1/2 lemon juice 
  • fresh ground pepper
Directions:
1. Boil water and some salt. Toss in the green beans and cook until the green beans are bright green in color and crisp, about 5 minutes. 
2. Drain the green beans and shock them in a large bowl of ice water to stop the cooking. Then pat dry.
3. Cook the bacon in a large skillet until crispy. Remove the bacon and only leave about 2 tablespoons of bacon grease in the pan.
4. Add chopped onion and sauté until soft and tender, 4 to 5 minutes. Next add garlic and red pepper flakes.
5 Finally add the green beans to the onion, garlic mixture and cook again for 5 minutes more. Return the bacon to the skillet and pour the lemon juice in and toss it together. Season with salt and pepper if you wish. 

And the final result was phenomenal! A little southern dish for my husband!

24 weeks


6 months baby!!!! Or am I going on 7 next week??
Since apparently a woman is pregnant for 10 months total...

It's always so confusing to me. All I know, is that I have 3 months to go
till we get to see our beautiful little princess.
 And I can not wait! Here is my baby bump update!


I seriously LOVE being pregnant. I feel so amazing, so happy (sometimes) and healthy! 
If you all thought I was a health freak before, psh! 

You should see the inside of my fridge. Its crazy to think I will do anything 
for this little bean. Anything to make sure she is the healthiest baby girl 
growing inside of me. 

Its amazing...

Pregnancy Update:

How far along are you? 24 weeks
Total weight gain/loss? 11 pounds still! They say you go through times where you gain a whole lot one month, then don't gain much the next... I think this past month I haven't gained much. Dr said baby is growing at a perfect rate though! 
Maternity clothes? nope! just summer dresses and tights. 
Stretch marks? no stretch marks yet on this belly
Sleep? i've been having a few leg cramps in the middle of the night that wake me up. (killer), besides that I am good still!
Best moment this week? my hubby feeling his baby girl move for the very first time ever!!!! Finally after me feeling her for a whole month straight. 
Miss anything? being able to work my butt off while I'm working...
Movement? yes tons! I love it! She hiccups too!
Food cravings? Chocolate protein shakes with banana and spinach salads... Talk about healthy.
Anything making you queasy or sick? no thank goodness. 
Have you started to show yet? yes, definitely. and people actually come up to me and ask how far along I am. 
Gender? baby girl Sophia!
Labor signs? no labor, but experienced my first Braxton Hicks ever.. scared me in the middle of the night. But I right away knew what I was going through.
Belly button in or out? in still. its just weird looking.
Wedding rings on or off? still on. and love it
Happy or moody? been moody. everything seems to bother me so easily. very low tolerance now. poor husband
Looking forward to? kicking my glucose test to the curb! 

As we are preparing for our baby shower. This whole registering process 
is just like our wedding... Stressful. 

There is so much, of so many colors, shapes, and sizes! 
What do you recommend to register for? 
Anything you could of lived without? 
Or you absolutely needed that you didn't get??

Beach Maternity

It's been a lake kind of summer, (even though I've only been able to go once.. boohoo). So we decided to go to the beach! The weather was supposed to be below 70, and I get extremely cold easily so I already knew I wasn't going to get in the water.

I basically put together a long maxi skirt, a white tank top and a light weight cardigan. Perfect flow material yet I was still warm.

 Summer necessities: Sunglasses, maxi skirts, tank tops, light weight clothing in case its breezy.

This whole outfit cost me about $30. The Blue Stripped Cardigan I got from the Goodwill Store for $4! The Skirt I got from Ross for $12, and the HOPE tank from Victoria Secrets I got a few years ago for $15.
Trying to keep the bump looking cute can be hard sometimes. But my only recommendation for you pregnant mommy's out there is to stay comfy. Being pregnant in the summer can be a bit hard hot! So dresses and long maxi skirts have been my best friend for the time being.. 

Oatmeal Lemon Bars

The little baker in me hasn't baked anything since April! What's up with that?? Not normal, at all. And since we were expecting a few family members to visit, I decided to make a yummy treat for everyone to enjoy. I call this a little "Summer-to-Fall" transition dessert. YUM!



Ingredients:

  • 1 can (14 oz.) sweetened condensed milk
  • 3 teaspoons grated lemon zest
  • 1/4 cup fresh lemon juice
  • 1 1/4 cups flour
  • 1 cup old fashioned oats
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt


Directions:
  1. Heat oven to 375F degrees.
  2. Coat 8x8 inch pan with non-stick cooking spray.
  3. Mix milk, lemon zest and lemon juice in medium bowl until thickened; set aside. Mix remaining ingredients in a separate medium bowl until crumbly.
  4. Press half of the crumbly mixture in pan; bake about 10 minutes or until set.
  5. Spread lemon milk mixture over baked crust. Sprinkle remaining crumbly mixture over the lemon milk mixture, press down gently.
  6. Bake about 20-25 minutes or until edges are golden brown and center is set but soft. Cool completely. Cut 4 rows by 4 rows.







These were just pure amazingness. The softness of the lemon cream in the middle, the hard crunchy granola bar on the bottom, and the top layer of crumbly oats mixed together perfectly
