Pulled Chicken Sandwiches

First of all, YUM. These were so easy, and so delicious I will be making them again when I am in a hurry for something good for dinner. Here are the ingredients to make the BBQ Chicken. So easy.
 The salt and pepper are for your preference of taste. I am not a huge fan of adding salt to my meals, but pepper (as you can see is almost out) is my favorite!

Ingredients for BBQ Chicken Sanwiches:
1 lb of Chicken Thighs -Now you can use any other Chicken part, but thighs tend to be more tender
1 1/2 cups of BBQ (or more if you wish)
2 Table Spoons of Honey
Dash of Salt & Pepper for taste
4 Wheat Buns
Bag of Pre-made Cole Slaw


Directions:
1) You want to make sure you cook your chicken all the way through. How ever you normally cook your chicken. I just put it in a pot of water and boiled it till it was done. About 30-45 minutes. When it is done cooking drain it, and let your chicken cool to the touch.
2) In a bowl mix together all your ingredients. (BBQ, Honey, Salt & Pepper)
3) Once your chicken is a bit cooled down, I used two forks and shredded my chicken. I didn't shred it too much because I like having some little chunks in my sandwiches.
4) Mix ingredients with shredded chicken.
5) I just left that aside. And since I have never made Cole Slaw before, I just bought some from the store pre-made since it was easiest and I barely had any time. I also bought a few wheat buns which were the perfect addition to these sandwiches. Soft, and delicious wheat bread.
6) I toasted my buns (haha), added about 2 spoonfuls of the BBQ chicken, and topped it off with the creamy cole slaw, and had some veggies on the side.

Oh my word......... they were to die for.

For The Love Of Breakfast

So, my husband loves his breakfast. And when I say loves I mean it. He can have breakfast everyday, all day if he had the choice. I unfortunately, am not a breakfast fan. I would rather eat lunch or dinner. (Ya I'm a little strange). So whenever I have the time and since I've been waking up so early lately, I decided to make him some breakfast. I always try to make him breakfast in bed. But having this Chemistry class, (which is finally over by the way) I never had time. So I decided to make him some breakfast two days ago. And he loved it.. Just like every other time. :)

I made a mini Pancake bar for us. We didn't have a ton of options as far as toppings went. But it's what we love and it was amazing! Oh my...... 
These were mine. I also made him some scrambled eggs with sautéed spinach and chopped onions (big onion fans), and a few turkey sausages.. I pretty much used all the toppings. The Pumpkin Spice was the best part to these amazingness of pancakes. Gave it that little extra yummy to my tummy. And then I begin to wonder why I don't eat breakfast more often... haha.

The Summer

My husband and I absolutely love going to the river and the lake. Well more like, we love to do anything that has to do with the summer (that includes water of course). Only problem is, I hate the heat. HATE HATE HATE. Which brings me to why water has to be included in our summer activities. I would rather be bundled up in blankets, Ugg boots, hot cocoa w/bailey's, and a christmas movie next to an open fire .... I can smell the holidays already! :) Fall and Winter! Yes, my favorite time of year if you didn't already know that. But besides that, summer always tends to be fun for us, considering that I'm pregnant this summer, I couldn't do half the stuff I would normally do in the summer. Wake board, surf (which I was still in the process of learning), water ski, jump off cliffs, do crazy donuts on a jet ski. But, in all honesty, I love being pregnant in the summer! I can show off my cute little Sopia bump in an awesome bikini which I've had for years! Only thing that doesn't help, is the heat! Gr! I HATE IT! Here are a few pictures from this past week when we went to the lake by our home. It was beautiful out, and the weather was absolutely perfect.
 I was very skeptical to wearing my bikini. I have always been pretty shy when it came to a bikini, but give me a few drinks and the shyness will disappear in no time! ;)  So I figured, what the heck!? I'm pregnant and if someone wants to judge, so be it! :) I was very proud of myself to walk out like this. I originally was going to wear a spaghetti strap and board shorts.. I'm glad I didn't. (22 weeks pregnant)
My oh so daring husband jumping off a 20+ foot cliff.. Not gonna lie, I was pretty jealous I couldn't go up there to join him in this amazing feeling... But it's okay, I got to lay out on the jet ski and wait at the bottom like pictured below.. ⬇


This picture above wasn't at a lake nor a river, but it was in Vegas when we went with a few friends a couple years ago to the Hard Rock Hotel. The pool was amazing! So I had to add this to the summer pictures of this post. It was so much fun, and this picture is pretty adorable I must add. 

These next few pictures were from previous trips we had taken to Lake Havasu with our family and friends. We try to go at least two times a year here. It's a bit far but always worth the drive.. And the drive home is probably what makes the trip amazing... We stop at Dairy Queen every, single, time. 


I had to add my momma in the pictures, she is beautiful isn't she??! (Yes, that is my mom.) The one of the right if you couldn't tell. We butt heads a lot, but hey, who doesn't!? Looking at her body after having 4 kids makes me only hope that I look half as good as this beauty does. 
Like I said, we love doing summer activities. And we can not wait to take Sophia on all these trips with us next year and forever!! She will love it just as much! And hopefully she becomes professional at wake boarding like her mommy and daddy!! ;) just kidding, no professionals here...

22 Weeks

First off, this 5 week Chemistry class has taken over my life. And it's been extremely hard for me to update my blog on my little growing Sophia.. So here is my week 22! Finally! She has been moving up a storm lately. Mostly at night and in the mornings. Really only when I'm laying down, trying to relax... So it begins I suppose? But I sure do LOVE feeling her movements. Nothing too hard to handle, yet that is.  Daddy hasn't felt her yet! And it's just driving me crazy because I want him to experience this with little Sophia and I. Soon enough! Im thinking maybe in a week or so. Fingers crossed** Everyone keeps telling me to enjoy this time of her not kicking me in the rib cage yet and sitting on my bladder... Neither sound fun, so I definitely am enjoying her "soft ballerina twirls" going on. haha. 


Here she is!! 22 weeks along. Weighing at about 1 pound now! And is 11 inches in length! With only about 18 weeks or so to go. I have a strange feeling she will be making her debut a little sooner though.  I decided to do a little something different this time with my chalkboard and did some photo editing online instead which was a lot quicker for me, considering that I barely had time to even get ready for the picture since I was trying to study for my final. (only 2 days of Chemistry left and I am FREE!!!)

Total weight gain/loss? 11 pounds up 
Maternity clothes? not really, just workout attire to class, and occasionally shorts or pants with a rubber band to hold them up since I cant seem to button anymore haha
Stretch marks? zero
Sleep? sleep has been a little weird for me lately. I wake up feeling a bit sore from constantly sleeping on one side.
Best moment this week? the hubby painting her room finally! 
Miss anything? being able to cook, clean, and be my normal self again.. but not because of Sophia, it's because of this ridiculous Chemistry class.
Movement? yes! eve
Food cravings? nectarines. yummy, I love my fruit everyday
Anything making you queasy or sick? not that I know of.  oh ya, the smell of my husbands feet when he gets home from work... sorry honey.. blah
Have you started to show yet? yup! my little mommas is out there! got to show her off at the lake the other day!
Gender? girl girl girl girl!!!!!
Labor signs? no thank God
Belly button in or out? still in
Wedding rings on or off? on still. makes me happy!
Happy or moody? been moody lately. but I promise, it has to be this chemistry class...
Looking forward to? our hospital tour tonight! It's going to be a little crazy to think that the next time we are possibly there will be for Sophia's arrival!

On another note, we finished painting her room! And as in "we" I mean my amazing hard working everyday gorgeous husband. ;) I love it! I am really falling for the gray wall paint. And looking online for a gray that wouldn't turn out blue was a little difficult. But, we found a color and its called Filtered Shade by Valspar. I found this picture off Google and decided to use it to show you. 



Obviously it's the color closest to the ceiling. Looks gray doesn't it? Well, "we" painted her room, and it looks a little more towards the blue shade.. But it's okay, I love it still!! And can not wait to get it put together for her. Thanks to my amazing husband for doing her room in one day! I love you! I cant wait to show you how her room turns out later. xoxo

Nursery Inspiration

So I am on the hunt to find some nursery ideas. Pinterest has definitely been my back bone on ideas, and I'm sure a ton of you momma's agree with this. We are leaning towards the gray earth tones, with a little gold, maybe some black thrown in the mix. Every nursery I found, I fell in love with, and most have some of the same things, a white modern crib, gray earth tones, baby dresser, an accent wall of possible stripes, polka dots, or maybe even something different! So when I finally came to the conclusion of starting to put together a collage on her room, this is what I came up with, and I honestly can't wait for her to get here! All I can picture is me being in her room holding her in my arms, rocking her to sleep on my glider singing her a happy song mommy to baby girl song.... You don't understand how EXCITED I am about being a mom.... It's going to be challenging, but definitely a challenge I am will to jump over backwards for. (Which I'm sure a lot of you mom's have this skill to the key! haha)



I am so excited to do all of this! Already started purchasing a few things.. Not many but it's a start! The hubby is painting her room today! I have a feeling I'm going to be sitting in this room a lot! Thinking of changing my bedroom now... Uh oh!

19 weeks



IT's A Girl!!!



How far along are you? 19 weeks 3 days
Total weight gain/loss? 10 solids up baby
Maternity clothes? nope, but yoga pants are my best friend.
Stretch marks? negative. moisturizing that baby bump
Sleep? yes, the whole night. (I stopped drinking water before 7) & I got my pregnancy pillow!
Best moment this week? finding out we were having a baby girl and feeling those first flutters finally!!!!!! 
Miss anything? all you can eat sushi dates.... 
Movement? YES FINALLY! 
Food cravings? hmmm, not really craving it all the time, but Hummus and Triscuits crackers are pretty bomb dot com right now.
Anything making you sick? no thank goodness.
Have you started to show yet? yup as you can see ^^
Gender? Baby girl Sophia Adele!!!
Labor signs? no, lets hope not for another 18 weeks
Belly button in or out? in still. But starting to make its debut. Looks kinda funny
Wedding rings on or off? still on and loving it
Happy or moody? moody, taking everything very serious... poor hubby.
Looking forward to? next week! its my half way mark! 

I guess it's time for me to start taking out all my cheerleading hair bows!!! Super excited to finally get ideas for a nursery... I love you baby girl!

17 Weeks


Since this was actually taken two weeks ago (June 17th 2013), I figured I'd still post it. Since I have been making sure to write all my experiences down. Here we go!!

Maternity clothes? not yet, still wearing normal clothes but jeans are unbuttoned

Sleep? waking up in the middle of the night to go pee only once now

Miss anything? not being able to workout as much as I used to
Movement? nothing yet, come on baby!
Food cravings? grapes

Why do men have it so easy!? We went to look for his wedding band because we were in the area, and he found his right away! I wish it was that fast for me to find my band. Lucky goose!

He thought he was a professional looking at diamonds.. ;)

Cant forget the fact that 2 days after we got married, his ring fell off in the ocean! GENTLEMEN, make sure your ring fits you snug!

The Dress


 Having to find a wedding gown was really emotional for me. I had gone a few times because I just couldn't find THE ONE. I was excited to go with my mom, sisters, and maid of honor but the search had to continue on. We went to about 4 different bridal shops and not one dress gave me that warm feeling in my heart. I got upset and very quiet which made me wonder if maybe I was being way to picky or maybe I just really didn't find "the one". 


Then finally I went to a Bridal Store called La Soie Bridal. It was a random woke up one morning and my best friend called me and said "hey! lets go look at this store just to look" so I was up for it! We went and I seriously fell in LOVE with the first dress I tried on. It was exactly what I had thought I can see myself in. Lace, mermaid, thin material, strapless, just beautiful. But the problem was the price. I didn't want to spend more then $500 on a dress, and this dress was over $1,700. Made me really sad. But, I was happy to have found something that I wanted! So I knew I needed to find that dress, but a knock off cheaper version of it.... That wasn't so easy.
After all this fuss, buying a cheaper ugly dress and settling, and not being able to sleep (yes, not being able to sleep because of a wedding dress), I decided to just do it, and buy the dress of my dreams. So I did. And I worked hard for it thats for sure!

Finding the perfect venue


Having to find our venue was probably one of the easiest things we did. We had no idea where to begin. People had been telling us to not pick a date, and just find a venue first, and depending on there availability, we would have a date. To be completely honest with you all, I didn't want to let some place choose the wedding date for us, I wanted to have a date that meant something to us, an "important" date, a date that was fun to say I suppose. So we made a list of places to go look at. Mostly barns, and outdoor settings since I had envisioned a "country/rustic themed wedding".  Finally tired of going to 15 plus places in one day, Chris decided to look at this one last place, (which I personally was not having it and wanted to eat and sleep). So we went anyway, last minute, while they were closed and the wonderful wedding coordinator met us for a last minute view of the place. WE FELL IN LOVE. We both had the biggest smile on our faces we wanted to give her our information on the spot! I'm pretty sure she knew it too! But my Fiancé (at the time) gave me a look like "shhh, don't say anything yet!" We got the info on the place, everything was included: linens, food, bartenders, DJ, utensils, cake, flowers, a pianist to play during the dinner, and even a horse carriage for me to ride down to the ceremony and for everyones use if they wanted to ride also! I mean how much easier can that be! That knocked out a whole lot of meetings and finding the perfect vendors for our wedding! It was awesome! All I wanted was a view of something beautiful during the ceremony, and I got that, plus more! DEFINITELY recommend Serendipity Gardens in Oak Glen. California.

One of the best times yet through out this wedding planning process...I cant even begin to explain how thankful we are for Chris' Best Man Nick for helping us with these images. THANK YOU!!! It was such an awesome experience.. Most of you know how much of a goofball Chris is, and for him to act so serious and sentimental during the shoot made it so funny! As you you all know, all I have been doing lately is wedding planning. Sometimes staying up till 4am pining things, saving pictures of ideas, decor, all that jazz. Its actually very fun and exciting that time goes by so fast and before you know it I have to be up for class/work. Thats the only draining part of it.
Finding my colors was probably one of the hardest things iv had to do so far. I started out by looking at pictures of weddings and which I personally think is a bad idea because they make every single color look amazing together. So I thought, I want something plain, creams, beige, browns etc... I looked and looked then finally came across this picture..

It has every color I want. The red wasn't on my list. But when I looked at it like this I fell in LOVE. I looked online for a ton of Vintage Rustic ideas. And here are a few ideas of what Im looking forward to having in the wedding. Vintage/Rustic Themed Wedding. <3 PERFECT.

Spontaneous San Francisco Trip!

          Having such busy schedules, Chris and I both got lucky enough to have the same days off. So when it comes down to those days, we make the best of it.... every time. This past week we told  each other we weren't going to do anything, and just stay in bed all day and relax. Since we have had so much wedding planning going on we wanted to just enjoy our days off and do absolutely nothing. Come Wednesday, when I got out of class I thought, I really wanna go to San Fran! Super random and spontaneous. So we packed our things, got in the car with a few friends and TOOK OFF! I have got to admit, it was honestly such a fun 24 hours! But if only we were there just a little tiny bit longer But on a bright side, got to spend some time with my uncle too!.... Here are a few pic's from our adventurous 24 hours! Enjoy<3

So Chris and I have been HUGE fans of the show called Alcatraz.. We both have been on this tour before but I was so young I couldn't remember anything about it. Tickets were sold out so we had to buy Stand By tickets and hope that 4 people wouldn't show. Sure enough, WE GOT IN!! It was sooooo exciting seeing everything as an adult, and knowing some of the History of Alcatraz. AMAZING...

Rustic Vegan Lasagna


Are you ready for your home to smell like Italy?? This is some yummy goodness in your mouth. Its like fireworks going up and down your belly its so delicious! Not only are Chris and I total Carnivores, but this meal is total Vegan and we loved it! Im all about trying things. Never be afraid. Be ready to take about 2 hours of your life making this simple meal.

I found this recipe off of Pinterest of coarse. So it was my first time making something off of the pining. 
Now here is where things get off the bang and get good. You will surprise yourself at how easy this is. The making of this yummy Vegan Lasagna. 

Ingredients:
5 Tbs olive oil + 1/4 cup for drizzling
8-10 cloves garlic, minced
2 (28-oz) cans Muir Glen Crushed Tomatoes with Basil, blended
2 tsp salt
4 tsp Italian Herb mix
2 eggplants, sliced to 1/2" thick
2 pounds fresh spinach, cleaned and chopped
12 slices of day-old rustic sourdough bread
Olive oil nonstick cooking spray
1/2 cup panko breadcrumbs
2 large tomatoes, sliced very thin
1/4 balsamic vinegar
1/3 cup fresh basil, chopped


Directions: 
Preheat oven to 400 degrees.
In a large pot, heat 3 tablespoons of the olive oil to medium then toss in about one-fourth of the garlic cloves. Cook for 2-3 minutes in the hot oil, stirring constantly to keep the garlic from burning. Add the crushed tomatoes, salt, and Italian Herb Mix and allow to simmer for 20-30 minutes.
Place the eggplant slices on a parchment-lined baking sheet. Drizzle with 1/4 cup of olive oil, salt and pepper, then slide pan into preheated oven for 30-40 minutes, or until eggplant is tender and slightly golden brown around the edges.
While your eggplant is roasting, spray each slice of sourdough bread on both sides with nonstick olive oil spray. Cook in a heated grill pan until toasty and golden brown on both sides.

In a large saucepan or wok, heat the remaining 2 tablespoons of olive oil over medium heat, sweat the garlic in the hot oil for 1-2 minutes, then add the chopped spinach and cook until wilted.
To assemble: Spread 1/2 cup of the tomato sauce in the bottom of a large casserole pan. Layer with bread until the dish is completely covered. Add half of the tomato sauce mixture on top. Layer all of the eggplant and spinach on top of the sauce. Add a second layer of bread over the spinach layer. Top with remaining sauce, making sure that you've covered the bread entirely with the sauce.

Sprinkle with breadcrumbs. Place sliced tomatoes across the top of the breadcrumbs. Salt and pepper generously.
Bake in preheated oven for 40 minutes. Allow to sit for 10 minutes, then drizzle balsamic vinegar over the tomatoes, sprinkle fresh basil. Serve with one of your favorite salads.. I of coarse had an avocado salad since for some reason iv been addicted to avocados. But yum! With a little Tejava.. Talk about goodness!!!

Bacon Wrapped Spring Chicken


This was something super last minute and I basically invited it and used whatever i had in my fridge to make it.. Im sure there is already something with a name out there like this... But id like to call this  Bacon Wrapped Spring Stuffed Chicken! I know super long but whatever.. Its SO DELICIOUS! And the best part about it is... Chris loved it! Enjoy!

Ingredients:

Stuffing:
1/4 cup of Cilantro
1/2 cup of Red and Green Bell Pepper
1/4 cup of Onion
1/2 cup of Spinach
1 medium sized Tomato
1/4 cup Blue Cheese Crumbles
1 baby Lime (squeezed)
Chicken:
2 (8-ounce) boneless, skinless, chicken breast halves defrosted
1/4 tsp of Sea Salt and Ground Pepper
1/2 tsp minced garlic
Toppings:
1/4 Avocado thinly sliced



Directions:

Preheat oven to 375º. Next you want to get your Chicken and slice a few areas in the middle of each Chicken so that you have space to stuff your Chicken. (Don't cut too deep). Then put your Sea Salt (or normal salt if you prefer), Pepper, and your Minced Garlic in the palm of your hand, and rub both Chickens with the mixture.

 



Next, get your Cilantro, Red and Green Bell Pepper, Onion, Spinach, Tomato, and Chop it. Place it in a small bowl so you can mix Ingredients together. Once ingredients are mixed in bowl, get you one small lime and squeeze the juice on top of the veggies. Mix again. 




Finally, for the stuffing. Place the Chicken on a baking sheet with foil. Then stuff both Chicken Breast halves with the mixture in the bowl. 



Finally you want to wrap your Chicken with the Turkey Bacon (I use Turkey Bacon because it has less fat, and is so much better for you). Wrap 2 strips of Turkey Bacon horizontally and 1 strip vertically. You may use toothpicks to hold the bacon in place. Do for both Chickens. Then place Chicken in oven for 40 min. Until Chicken temp is close to 180º.




Meanwhile that’s cooking, I made some brown rice since brown rice takes about 30 minutes to cook fully. And when finished I sliced up my Avocados and stuffed the Chicken lastly with the Blue Cheese Crumbles. DELICIOUS!
